Surely the only way to get a better sleep absorber than your opponent is to use a surprise sleeper like Chansey or Lapras? Well it depends on what both teams have. If you let your zam get slept, and then they have to let their eggy or gengar get slept, then that is a positive trade for you because they are inferior absorbers to zam.

Gar's far better at taking sleep than Zam, it's just not as good at switching into sleepers.

Now I'm gonna call shenanigans on that. First of all, being able to switch into a sleeper is part of the whole "good sleep absorber" bag. Second of all, Gengar is all but hopeless if it actually wants to wake up later in the match, whereas Alakazam has a pretty good chance of waking up. The only thing Gengar really has going for it as a Sleep absorber is Explosion-catching utility WHILE asleep.

Second of all, Gengar is all but hopeless if it actually wants to wake up later in the match, whereas Alakazam has a pretty good chance of waking up. The only thing Gengar really has going for it as a Sleep absorber is Explosion-catching utility WHILE asleep. Egg, Zam and Psychic Starmie hit Gar; Surflax, Persian, and Victreebel (and to an extent Dragonite) hit Zam. Otherwise, it's mostly a wash. It does help that Body Slamming Gengar does 0 damage while Earthquaking Alakazam still usually assures a 2HKO, though. And yes, Zam is much safer to catch sleep with than Gar. I was refuting Dre's contention that if your opponent sleeps your Zam and you sleep their Gar, you've somehow gained something out of this. Zam is typically more useful than Gar when awake and less useful when asleep; that sleep trade advantages the player using Gar.

Victreebel, Persian, and non-EQ Surflax are all way less common than all the Psychic users.

Switching into specials is far better than switching into physicals. Apart from the fact that those pokemon you mentioned are far less common, gengar can't help stall, cant relieve spc drops, and can't recover even if it wakes up.
The only thing it can do is switch into explosions, which is incredibly risky and very hard to predoct against good players. Switching into body slams whilst asleep isn't even that good because most smart players will just body slam again because a chain switch will be expected.
