Overview
Golem is a Physical monster with very high Attack and a diverse movepool of Physical moves. Golem is the second strongest Self-KO user (next to Snorlax), one of the strongest Grounds and Rocks, and can take Physical attacks very well. Golem is slow though, so he's best used against Paralyzed Pokemon, and he also has low Special, making him easily KO'd by most Special attacks.

Golem has power STAB attacks, Earthquake and Rock Slide, Explosion for quickly KOing or when he's about to faint, and Body Slam for Pokemon switching in. Golem is most commonly used for walling Zapdos and other Electrics, and since the opponent will switch out, Body Slam can be used to try to Paralyze what comes in next. Golem is also great for switching into Hyper Beam to retaliate on the recharge, and switching into Electric attacks, including Thunder Wave is very possible too.
Golem is powerful, but very slow, so Golem will often go one-for-one against Pokemon either through using Explosion, or with one of the Pokemon having very little HP left. Golem works much better by sweeping Paralyzed Pokemon, so that he won't be getting hit due to his low Speed. Explosion can be saved for when Golem is about to faint (though may be obvious), or could be used earlier if you need to be sure to eliminate a Pokemon quickly (say, Chansey for example).
Substitute is an alternative option if Golem wants to try to get one up during a switch or against a Paralyzed Pokemon. In that case, Rock Slide is removed as the least useful move, but Rock Slide is generally more useful than Substitute.
When compared to Rhydon, Golem is weaker and despite higher Defense and Special, Rhydon's HP allows him to take less damage percentage-wise anyway. The only two things Golem has over Rhydon are Explosion and 10 extra Speed, but are often enough to make Golem the preferred choice. By being faster, Golem will beat Rhydon one-on-one, instead of being in a Speed tie, and by having Explosion, Golem can create pressure better by being less predictable and by being capable of taking out a Pokemon immediately.
Counters
Because of Golem's pressure with Explosion and his sheer power, he can be awkward to counter. Waters like Starmie and Lapras work well, and Exeggutor is fantastic by switching into Earthquake. Articuno is also an option, but switching into Rock Slide will be nearly fatal, in exchange for Earthquake immunity. Most Pokemon can take out Golem, but Special attacks are easily switched into and it can be predictable what will be used to attack Golem with.
Generally, Golem will slowly be taken out by attacks throughout a match, and more often Golem will take himself out with Explosion. If Golem is about to explode, Gengar and Rocks are safest, but risk switching into a very damaging Earthquake, while using sacrifice Pokemon may just be KO'd by Earthquake too, but the following Pokemon may be able to finish him off.
To put shortly, prediction is required to beat Golem safely, but if you're successful, Golem will have been overall harmless. Mistakes can be costly so be careful.
