Alakazam Chansey Exeggutor Snorlax Starmie Tauros
Correct me if I'm wrong but I think that's a standard team. Maybe switch Alakazam for a Gengar/Golem/Rhydon.
Just out of curiosity, I'm wondering if there's a such thing as a team tailored to counter it. Off the top of my head I would think that a fat water type to take the physicals would help or maybe a counter chansey and add your own snorlax/tauros. If there's no ground types then I'd assume that the finisher would probably be Zapdos/Jolteon especially because they can help with the Psychics.... Then add in some sleepers/stunners and that's it?
Given that you're of equal skill with an opponent, is there a team that on paper can stand up against one of these teams and win 51% of the time? I'd just like to hear a discussion or something about the thought process that goes behind trying to pick apart a team that you've faced a hundred times because to me it just seems like pick one of the top nine and hope to get a few more crits and thats it but it has to be a lot deeper than that, right? OR it really is just about luck.

good/bad team matchup hardly exist unless maybe if we consider wrap. That's the reason of why if something is standard it's always good. Maybe you can get away with a zapdos standard team and you are lets say 52% but that's about it.

Yeah counter-teaming doesn't really exist in RBY unless you know the opponent is using Zapdos/Jolteon (in which case: use a Rock), or is using Persian/Dragonite (in which case you use Gengar). Or vice-versa if you know your opponent isn't using a Rock or Gengar. Or you could use Cloyster to wall the ever-popular Snorlax or Slowbro to set up on stuff like Reflect Zam/Chansey. Counter on random things lets you beat unsuspecting Normals, too. Even if you use any of this stuff, it really only deals with a single threat rather than a whole team. However, regardless of any counter-measures taken against certain threats, 2 well-built RBY teams that go into a match are generally going to have roughly even odds from the start, partly because if there's a Tauros, there's a way, and Tauros is on pretty much every good RBY team.

How does using a counter poliwrath instead of starmie on the "standard team" stand up against the "standard team"?? Dre was telling me about it and I guess adding another physical helps, anyway Starmie, zam AND chansey on a team does seem like a bit much...

It doesn't really help against the most standard standard team because Counter Poliwrath has 4-moveslot syndrome. Counter + Submission beats the Physicals, which is nice for a surprise, but Starmie, Zam, Gengar, and Eggy all ruin it, and most standard teams are going to have at least two, so Hypnosis isn't going to cut it. It's nice against the formulaic teams that go with Lapras > Starmie and a Rock, though.

I am pretty sure the main appeal is to come in on Hyper Beams from Tauros/Snorlax and KO with Counter.

Just want to point out that if you use my poliwrath set (Drewrath lol) you should be dropping your physical wall instead of starmie. So everyone else knows this, I run hypnosis surf submission counter. This can beat rocks and every normal 1v1. He's a more 'genuine' physical wall to physicals than the the rocks are because unlike them he can actually stay in and force the physical out. He can't catch as many hyperbeams, but he can do more damage when he catches one. Counter isn't just for catching hyper beams though. If you switch into a snorlax body slam, countering it will do 70% to starmie. The biggest problem with my set is that it doesn't have a move to finish off a countered starmie if it's paralysed before it can recover.
