With this thread I ask one simple question. What if you could control what move to copy when using mimic? How much more usage would the move see and what would the effect on the meta game be?

Probably wouldn't be too big a deal to be honest. You're still at the mercy of what your opponent chooses to switch in or what sets they are willing to run. Not to mention it's a turn you have to spend just to get a move, let alone actually use that new move. Mimic is just the last refuge of Pokemon with poor movepools who don't have anything better to use for themselves.

I agree with Jorgen, the fact that you have to stay in to use that move, while the opponent can switch, means the loss of a turn AND a moveslot. Overall Mimic would cause some more mind game (switch/stay in) but it's very slow, so mainly restricted to stallwars or when you're walled. Maybe vs Chansey (get Softboiled/Ice beam and scout the moveset) or with Snorlax to get recover. Zapdos vs Golem, many vs Gengar and maybe Jynx/Zam vs Starmie, because those ones have moves they're weak to (I like Psychic Gar, but it's not standard- and maybe Psychic would be used less).

Jynx (and Dodrio) can let up a moveslot for Mimic.
Jynx likes stealing Recover/Softboiled so that it can use up its attacks before dying. Dodrio likes Mimic because it can steal Earthquake and Explosion from Golem (and a STAB CH Explosion from Dodrio does a massive amount of damage - more than CH EQ).
If Persian could somehow steal Earthquake from Golem and then OHKO it with CH BubbleBeam, it'd be happy too!

Zapdos really doesn't get much from stealing EQ from Golem. I had a game where I did steal EQ, and Golem just tanked it and destroyed Zapdos with Rock Slide.
Rhydon would be even worse I imagine.

Yeah, to be more effective, it should be coupled with Reflect. Rock Slide hurts, but I think that if you are against a Golem with Substitute over RS, it can work. Previous damage and paralysis are welcome too. Still a bad MU, without a doubt.

Lapras and Exeggutor love Recover, and Recover users tend to be their main counters. So they'd use it a fair bit.
Slowbro's biggest counter is Thunderbolt Starmie, and it could turn the tables by stealing Thunderbolt for itself. Stealing Softboiled from Chansey wouldn't hurt either, although that's not really worth the moveslot.
If GolDon are out of the way, Zapdos could steal Softboiled from Chansey and become a terror. Blizzard's nice but it doesn't help against most of the things that have it (exceptions: Blizzard Rhydon and Blizzard Dragonite) so it's usually not worth the turn.
Articuno steals Thunderbolt from Starmie/Lapras, reducing its counters significantly, or Recover/Softboiled from Starmie/Chansey giving it longevity. Then again, Articuno loves to Mimic Starmie even without precision.
